The Leva S is a spring-piston lever machine built to modern commercial standards. There is no pump driving the shot: pulling the lever compresses a heavy internal spring, and the spring pushing the piston back down is what extracts the coffee. Pressure peaks early and declines naturally through the shot — the curve that lever devotees chase and that no electronic machine reproduces quite the same way.
A lever you can actually run all day
- Redesigned cam geometry: La Marzocco states the Leva reduces the force required to operate it by almost 50% compared with a traditional lever machine. That is the difference between a lever being a feature and a lever being a staffing problem.
- Safety clutch: a mechanical clutch prevents the lever snapping back on sudden pressure loss — a portafilter pulled early, or a grind gone coarse. This is the single biggest reason traditional levers stayed out of commercial bars.
- Adjustable pre-infusion, 2 to 4 bar: set the saturation pressure with a regulator knob rather than accepting whatever the spring gives you. Lowering the setting requires bleeding pressure through the group, as it is a non-relieving reducer.
- Saturated groups on a 3.4 L coffee boiler: permanent thermal equilibrium with the boiler, heated by a 1400 W element, plus an 8.2 L steam boiler at 3000 W running independently.
- Exposed mechanics: the lever group is deliberately left in view. On a bar where the machine is part of the experience, watching the piston work is the point.
- Pro Touch steam wands and a hot water economizer as standard, with ECO mode available.
Living with a Leva
Lower the lever a few degrees to load water and begin pre-infusion; a full 180° half-turn delivers the maximum dose at peak pressure. Maximum delivery pressure should never exceed 12 bar, marked in red on the gauge. There are no volumetric doses and no scales — extraction is judged by the barista, which is the whole proposition.
Best suited to
Roastery bars and specialty cafés where the machine is a signature, hotel and restaurant settings that want a talking point with real substance behind it, and skilled teams who want the lever pressure curve without the safety and fatigue problems of a vintage machine.
Note the Leva's height: at 30.6 in it is roughly 11 in taller than a Strada or Linea and needs its overhead clearance planned. Requires a dedicated 30 A circuit. Certified UL-197, NSF-8 and CAN/CSA-C22.2 No. 109.
